I know you're struggling with this, Sammi. Hang in there. Something I do that helps me a lot is to buy the skinless, boneless chicken breasts in a good quantity and trim all the fat off the pieces. I freeze
some breasts whole and cut up some for stir-frys, etc. This helps out so much when I don't feel like cooking. I have the chicken in the zip-lok freezer bags and pull out some to thaw in the frig. I use it within a few days this way. This makes fixing those entree's with chicken so much quicker and easier for me. I eat a lot of PPJ too, but I do try to use whole wheat bread. Do you not care for whole wheat? Do try to get the protein you need. Barbara Dugan was forever on me to get more good protein in my diet. I'm STILL working on it. It sure would help if my husband clamored for fish the way he does red meat! I remember your husband likes his red meat too. Just keep up the trying.
