Sammi,
I know that it sounds tough, but YOU CAN DO IT! My husband has to have his red meat, doesn't like fish, etc. It has not been easy, but I have been on diet for 7 years. I still do not do the red meat thing. I decided that it was easier for me to give it up completely. (I'm the farmer's daughter and thought I would just give up on it rather than tempt myself.) I eat a LOT of chicken and am STILL learning how to get enough protein in my diet easily. Like you I do not like to cook and have worked full time for most of the last 7 years. When I get home the last thing I feel like doing is standing up to cook. Try to find SIMPLE ways to eatright. Recently I have used more soy--easy ways, like just having soy nuts, soy "cheeses", etc. to get the protein in my diet. This can be a problem, too though, as my family doctor says I need to avoid soy foods since my hormones are estrogen dominant and soy encourages estrogen production! (Sometimes it seems we just can't win!) But do not give up!
Is your husband supportive? For the first few years my husband really wasn't, but now I think that he sees that the diet has worked for me. Stick to your guns--remind yourself and him that you ARE doing this diet, not just for yourself, but for your FAMILY. I also have browned meat to the side for spaghetti, taco salads, etc. while I have meatless or chicken.
YOU CAN DO IT! YOU HAVE TO DO IT FOR YOUR HEALTH!
Others out there who have found EASY ways to add protein--we would appreciate the help!
