The ones who are successful and stay the most abled, stay on it totally. We all had to go through that first year and after a while it is done without thinking. I buy turkey breasts whole and bake them without skin. Then break it down into smaller packages for use later in turkey and noodles, turkey and stir fry, etc. The same with chicken breasts, tuna, shrimp, salmon, white meat fish.

And many of us have mates who are red meat eaters. When Dennis grills his steak, he also grills my chicken breast. It is a bit difficult to get used to, but then how badly would you like to stay mobile with less disabilities? You mentioned having a young child. All the more reason to stay as well as you can. It would be nice one day to dance at their wedding. :)

There are a ton of us who have done it and so can you. Try to bake on weekends in large amounts that can be frozen for when you need something fast. Fix baked potatoes. Hubby smears on butter, you put on one or teaspoons of oil. Hubby pours on fat filled salad dressing, you add fat free.

I fix spagetti and then put the sauce in two bowls. One has browned burger in it for Dennis and the other has chunked up turkey for me. And once your year is over, once a week you can cook spagetti and use buffalo burger. MS is something none of us asked for but in this one area you can do a lot to tip the scale in your favor.
